Spicy tofu-bell pepper supreme

Quantity Ingredient
2 tablespoons Olive oil, extra virgin OR
2 tablespoons Vegetable stock
cup Bell peppers, mixed green and red; diced
¾ cup Onions, yellow; cubed
cup Salsa, tomato mild
½ cup Olives, black; pitted
cup Garbanzo beans, canned; drained
1 cup Tofu; baked, cubed
teaspoon Salt
teaspoon Pepper

Combine the oil, peppers, and onion in a saucepan and cook over high heat for 5 to 8 minuts. Reduce the heat and add the remaining ingredients. Cook over medium heat for 10 minutes. Serve with Fresh Corn Salad or brown rice.
