Spicy tofu-bell pepper supreme

Ingredients

2 | tablespoons | Vegetable stock |
1½ | cup | Bell peppers, mixed green and red; diced |
¾ | cup | Onions, yellow; cubed |
1¼ | cup | Salsa, tomato mild |
½ | cup | Olives, black; pitted |
1½ | cup | Garbanzo beans, canned; drained |
1 | cup | Tofu; baked, cubed |
⅛ | teaspoon | Salt |
⅛ | teaspoon | Pepper |
Directions
Combine the oil, peppers, and onion in a saucepan and cook over high heat for 5 to 8 minuts. Reduce the heat and add the remaining ingredients. Cook over medium heat for 10 minutes. Serve with Fresh Corn Salad or brown rice.
