Spicy tomato soup

Ingredients

Quantity Ingredient
30 ounces Stewed tomatoes
5 ounces Tofu, sliced
3 cups Coconut milk
2 tablespoons Cilantro leaves, chopped
1 tablespoon Red curry paste
2 tablespoons Soy sauce
1 tablespoon Lemon juice

Directions

GARNISH

Puree the tomatoes. Set aside. Puree the tofu & the coconut milk.

Mix all the ingredients together in a soup pot. Bring to a boil, lower heat & simmer for 10 minutes. Garnish with cilantro.
