Squash gratin with white cheddar cheese

Ingredients

1 | Medium-sized onion, sliced | |
2 | pounds | Yellow squash, thinly sliced |
1 | teaspoon | Salt |
Freshly ground pepper | ||
2 | Eggs | |
2 | tablespoons | Sugar |
½ | cup | Milk |
½ | pounds | White cheddar cheese, grated (substitute yellow if need be) |
2 | tablespoons | Butter |
Directions
In a saucepan cook the onions and squash in a small amount of boiling water for 10 to 15 minutes, until tender. Drain well. Arrange in a 2-quart baking dish. Add the salt and pepper.
In a medium bowl combine the eggs, sugar, milk and cheese. Pour over the square mixture and dot with the butter. Bake in a 350F oven for 45 minutes.
Cut into squares.
Serves 6 to 8
