Standard chutney recipe

⅔ | cup | Salt |
5 | pounds | Red tomatoes; peeled and |

3 | pounds | Brown sugar |
2½ | pint | Cider vinegar |
¼ | pounds | Ginger; minced |
½ | pounds | White mustard seed |
Cayenne pepper to taste | ||

Directions
Cook all together slowly in a gigantic kettle (or in batches) for 3 hr until thick. Put up in jars in the standard way, using a hot water bath.
:makes 1 gallon or so
