Standard chutney recipe

Ingredients

Quantity Ingredient
5 cups Seedless raisins; chopped
6 cups Green apples; chopped - or
Pears
2⅔ cup Onions; minced
cup Salt
5 pounds Red tomatoes; peeled and
Diced
3 pounds Brown sugar
pint Cider vinegar
¼ pounds Ginger; minced
½ pounds White mustard seed
Cayenne pepper to taste

Directions

Cook all together slowly in a gigantic kettle (or in batches) for 3 hr until thick. Put up in jars in the standard way, using a hot water bath.

:makes 1 gallon or so
