Statesborough meatloaf

1½ | tablespoon | Vegetable oil |
1 | medium | Onion -- chopped |
3 | mediums | Garlic cloves -- crushed |
2 | pounds | Lean ground beef |
2 | teaspoons | Salt |
1 | teaspoon | Black pepper |
2 | Eggs -- beaten | |
¾ | cup | V-8 juice |
½ | cup | Fresh parsley -- chopped |
1 | tablespoon | Bottled Caribbean-style |
Sauce such as Hellfire & | ||
Damnation Hot Sauce | ||
1 | cup | Fresh breadcrumbs |
Directions
Preheat oven to 350~. Heat the oil in a skillet and saute onion until translucent, about 5 mins. Add garlic and saute one minute. Transfer the onion and garlic into a lg. mixing bowl and add the beef, salt, black pepper, eggs, juice, parsley, and sauce. Mix well. Oil a 12"x8"x2" pan and pour in mixture, molding it into a loaf. Sprinkle the top w/breadcrumbs and bake for on hour.
