Statesborough meatloaf

Ingredients

Quantity Ingredient
tablespoon Vegetable oil
1 medium Onion -- chopped
3 mediums Garlic cloves -- crushed
2 pounds Lean ground beef
2 teaspoons Salt
1 teaspoon Black pepper
2 Eggs -- beaten
¾ cup V-8 juice
½ cup Fresh parsley -- chopped
1 tablespoon Bottled Caribbean-style
Sauce such as Hellfire &
Damnation Hot Sauce
1 cup Fresh breadcrumbs

Directions

Preheat oven to 350~. Heat the oil in a skillet and saute onion until translucent, about 5 mins. Add garlic and saute one minute. Transfer the onion and garlic into a lg. mixing bowl and add the beef, salt, black pepper, eggs, juice, parsley, and sauce. Mix well. Oil a 12"x8"x2" pan and pour in mixture, molding it into a loaf. Sprinkle the top w/breadcrumbs and bake for on hour.
