Superdophilus bread

2 | cups | Lukewarm water |
1 | each | Level tsp lactobacillus acidophillus culture |
2½ | each | To 3 cups whole wheat bread flour |
½ | cup | Oat bran |
½ | cup | Yellow corn flour or soy flour |
Directions
Stir lactobacillus culture with water in a large bowl. Add warmed flours and bran and stir to form a soft dough. Cover and leave in a warm place for at least 4 hours. Knead for about 5 minutes, adding more flour if too sticky. Shape into two small loaves and allow to rise in a warm place on a cookie sheet for 1-3 hours. Bake at 350F for 40-45 minutes. This bread may be varied by using different flour, eg. rye. Superdophillus is obtainable from health food stores, or from: Natren Inc, No. Hollywood, CA, 91602.
