Sweet and spicy stir-fry

1 | can | DEL MONTE Pineapple Chunks In Its Own Juice, undrained |
2 | teaspoons | Vegetable oil |
1 | large | Red or green pepper, cut into strips |
1 | can | DEL MONTE Cut Green Beans, drained (8 oz) |
4 | Half boneless chicken breasts, skinned, cooked and cubed (from MEDITERRANEAN CHICKEN) | |
¾ | cup | Sweet and sour sauce |
½ | teaspoon | Crushed red pepper flakes |
4 | cups | Cooked rice |
Directions
Prep time: 5 minutes. Cook time: 5 minutes.
1. Drain pineapple, reserving ⅓ cup juice.
2. In large skillet, heat oil over medium-high heat. Add pepper strips; stir-fry 2 minutes.
3. Add green beans, chicken, sweet and sour sauce, red pepper flakes, pineapple, and reserved juice; stir-fry 3 minutes or until heated through.
4. Meanwhile, place rice in microwavable dish; sprinkle with 2 teaspoons water. Cover with plastic wrap; slit to vent. Microwave on HIGH 4 minutes or until heated through. Spoon onto serving plate; top with chicken mixture.
