Sweet and spicy stir-fry

1 can DEL MONTE Pineapple Chunks In Its Own Juice, undrained
2 teaspoons Vegetable oil
1 large Red or green pepper, cut into strips
1 can DEL MONTE Cut Green Beans, drained (8 oz)
4 Half boneless chicken breasts, skinned, cooked and cubed (from MEDITERRANEAN CHICKEN)
¾ cup Sweet and sour sauce
½ teaspoon Crushed red pepper flakes
4 cups Cooked rice

Directions

Prep time: 5 minutes. Cook time: 5 minutes.

1. Drain pineapple, reserving ⅓ cup juice.

2. In large skillet, heat oil over medium-high heat. Add pepper strips; stir-fry 2 minutes.

3. Add green beans, chicken, sweet and sour sauce, red pepper flakes, pineapple, and reserved juice; stir-fry 3 minutes or until heated through.

4. Meanwhile, place rice in microwavable dish; sprinkle with 2 teaspoons water. Cover with plastic wrap; slit to vent. Microwave on HIGH 4 minutes or until heated through. Spoon onto serving plate; top with chicken mixture.
