Sweet potato with chilli and coriander yoghurt

4 Sweet potatoes; washed and pricked
½ pint Sour cream or Greek yoghurt
1 Lime; zest of
1 Green chilli; finely chopped
1 Red chilli; finely chopped
Fresh coriander to garnish

Directions

CHILLI CREAM

Preheat the oven to 200C/400F/gas 6. Bake the sweet potatoes in the oven for about an hour, or until cooked.

Meanwhile, combine all the cream ingredients together and set aside.

Serve the potatoes, cut open, topped with a dollop of chilli cream, scattered with coriander leaves.
