Sweet potatoes with marshmallows

Ingredients

Quantity Ingredient
5 mediums Sweet potatoes or yams
4 tablespoons Butter
4 tablespoons Brown sugar
pinch Salt
1 teaspoon Cinnamon
½ teaspoon Ground ginger
12 larges Marshmallows plus more to cover top

Directions

Peel the sweet potatoes, cut into quarters and boil in salted water until tender enough to mash. Drain and mash them with electric mixer. While beating the potatoes, add butter, brown sugar and spices. Add 12 marshmallows, one at a time; they will melt right into the hot potatoes. Turn the potatoes into a well-buttered 8x12" baking dish. Cover with a layer of marshmallows. Bake uncovered at 350 degrees for 20-30 minutes, until marshmallows are large, soft and golden brown.
