Swordfish with salmoriglio sauce

Ingredients

½ | cup | Olive oil |
¼ | cup | Lemon juice, fresh |
2 | tablespoons | Hot water |
6 | tablespoons | Parsley, fresh, chopped |
2 | larges | Garlic cloves, fine chopped |
1 | tablespoon | Oregano, dried |
6 | Swordfish fillets (6 oz ea.) |
Directions
Preheat broiler or BBQ. Whisk olive oil in top of double boiler over simmering water until heated through. Gradually add the lemon juice, then 2 Tbsp hot water. Add chopped parsley, garlic and oregano; cook sauce 5 minutes to allow flavors to blend, whisk frequently. Season sauce with salt & pepper to taste, remove from heat.
Lighty brush fish on both sides with sauce. Season with salt & pepper.
Grill or broil until just cooked through, about 5 minutes per side.
Arrainge fish on platter and spoon remaining sauce over.
