Texas barbecue brisket as served to lyndon johnson (m)

Ingredients

5 | pounds | Brisket of beef |
1 | teaspoon | Salt and freshly ground pepper to taste |
1 | large | Onion -- chopped |
2 | Stalks celery | |
1 | cup | Chili sauce |
1 | cup | Water |
¼ | cup | Chopped parsley |
10 | ounces | Bottle beer |
Directions
Remove most of the fat and wash and dry. Sprinkle with salt and pepper. Place the meat, fat side up, in a casserole and cover with the onion, celery, chili sauce, water and parsley. Bake uncovered in a preheated 325 degree oven for 1 hour. Pour the beer over thebeef and bake covered, 3 more hours or until tender. Cool to room temp.
Refrigerate, skim off the fat, slice and reheat in the oven.
