Tofu and vegetable kebabs

Ingredients

125 grams Mushrooms; (4oz)
1 Red pepper
1 Green pepper
1 Yellow pepper
1 Red onion
250 grams Tofu; (8oz)
3 tablespoons Dark soy sauce
2 tablespoons Medium dry sherry
2 teaspoons Dark brown soft sugar
1 Clove garlic; crushed
½ teaspoon Five spice powder

Directions

Clean the mushrooms and slice in half lengthways. Deseed the peppers and cut into 2. 5cm (1 inch) pieces. Peel the onion and cut into 8 pieces.

Cut the tofu into 2. 5cm (1 inch) pieces.

Mix the marinade ingredients together, add the tofu, toss well and leave to marinade for 20 minutes. Drain, reserving the marinade.

Thread the vegetable pieces and marinated tofu alternately onto skewers.

Place under a preheated moderate grill for 8-10 minutes, turning and basting with the reserved marinade occasionally.

Notes:

Alternately suitable for barbecues.
