Tofu poke

Ingredients

| 16 | ounces | Tofu, firm |
| 1 | medium | Onion, sliced thinly |
| 6 | mediums | Tomatoes, julienned |
| 1 | teaspoon | Ginger, fresh minced |
| 3 | tablespoons | Soy sauce |
| 1 | teaspoon | Sesame seeds, toasted |
| Lemon juice to taste | ||
Directions
Drain and rinse the tofu. Cut it into ½ inch cubes and place the cubes in a mixing bowl. Add the tomatoes and onions. In a separate container, mix the ginger, soy sauce, sesame seeds and lemon juice.
Pour this mixture over the tofu and vegetables. Turn gently and allow to marinate in the refridgerator for a few hours before serving.
Serve over cous cous or pasta.
