Twice cooked pork

2 | slices | Ginger |
¼ | cup | Rice wine |
2 | Green peppers, cut in 1\" sq | |
2 | Red peppers, cut in 1\" sqs | |
3 | Cloves garlic, sliced | |
1 | tablespoon | Bean paste |
½ | tablespoon | Chili paste |
1 | tablespoon | Soy sauce |
1 | teaspoon | Sugar |
3 | tablespoons | Oil |
Directions
Place the pork (in one piece) in a pot, combine with ginger, scallion, wine, and water to cover. Boil 30 min. Remove, drain, and when cool, slice pork in thin slices. Mix bean paste, chili paste, soy sauce, and sugar. Stir-fry pork in 3 Tbs oil for 1 min; add garlic and green and red pepper; stir-fry 1 min. Remove from wok. Usw remaining oil to stir-fry the bean paste mixture for 10 sec. Return pork, stir to mix, and serve.
