Vegetable paella

Ingredients

1 large Leek; quartered, sliced thin
½ large Green pepper; chopped
2 Carrots; chopped
2 Celery; chopped
2 Green onion; chopped
1 large White onion; chopped
8 Sprigs fresh thyme; leaves only
8 Sprigs fresh mint; minced
3 tablespoons Parsley; fresh minced
½ teaspoon Turmeric
3 tablespoons Tomato sauce
1 cup Rice
1 cup (to 2 c) Water or Chicken stock
1 can Peas

Directions

In a large pot or wok, saute leek, green pepper, carrots, celery, green onion and white onion... about 2-3 minutes. Add fresh thyme, mint and parsley. Add turmeric and tomato sauce. Add 1 cup rice and saute another minute or two. Add 1 to 1½ c water or chicken stock, cover and simmer 15 minutes. Add peas, cover and simmer another 5 minutes or until all moisture is absorbed by rice. Mmmmmm, delicious, simple and quick.
