Vegetarian stoganoff

1 tablespoon Olive oil
450 grams Vegetarian mince
75 grams Portabellini mushrooms; halved
1 Garlic clove; crushed
1 Vegetable stock cube
1 tablespoon Tomato puree
Salt and pepper

Directions

1 Heat the oil in a frying pan. Fry the mince along with the mushrooms and garlic for 2-3 minutes.

2 Dissolve the stock cube in a third of a pint of water and pour over. Mix in the tomato puree and seasoning. Simmer for 8-10 minutes. Stroganoff is best served with rice.
