Wagon wheel vegetable salad

½ | pack | Wagon-wheel shaped Pasta |
2 | cups | Brocoli florets |
1 | Stalk of celery, thinly Sliced | |
2 | Green onions, sliced | |
¼ | Cucumber, sliced | |
2 | tablespoons | Chopped fresh parsley |
1 | cup | Mayonnaise |
½ | cup | Sour cream |
2 | Cloves garlic, minced | |
2 | teaspoons | Prepared mustard |
½ | teaspoon | Each of paprika and salt |
8 | Cherry tomatoes, cut into Wedges |
Directions
Cook wagon wheels according to package directions, adding brocoli during the last 4 minutes; drain. Rinse in cold water to cool; drain well. In large bowl, combine wagon wheel-brocoli mixture with celery, green onions, cucumber and parsley. In separate bowl, combine mayonnaise, sour cream, garlic, mustard, paprika and salt; mix well.
Pour over pasta mixture; toss to coat. Cover and chill 2 hours or overnight. Just before serving, add tomatoes and toss gently.
