Walla walla relish

3 | cups | Onions, Walla Walla; sliced 1/4\" or other sweet onion about 1 pound |
Cooking spray, olive oil flavored, vegetable | ||
1 | cup | Tomato; diced, seeded |
2 | tablespoons | Basil, fresh; thin sliced |
1½ | tablespoon | Peppers, jalapeno; seeded chopped |
2 | teaspoons | Oil, extra virgin oil |
2 | teaspoons | Vinegar, white wine |
¼ | teaspoon | ;salt |
⅛ | teaspoon | ;pepper |
Directions
Arrange onion slices in a single layer on a jelly-roll pan coated with cooking spray. Bake at 400 degrees for 15 minutes. Turn over the onion slices, and bake an additional 25 minutes or until tender and lightly browned. Let cool; coarsely chop onion.
Combine the chopped onion and remaining ingredients in a bowl; stir well. Let stand at room temperature 20 minutes before serving. Serve relish with grilled salmon or chicken. Serving size ⅓ cup.
