Whisked sponge

Ingredients

2 Eggs
4 ounces Caster sugar
4 ounces Plain flour, sifted

Directions

Grease and base-line an 8-in. sandwich tin. Whisk the eggs and sugar in a bowl over hot water until thick and leaving a trail. Remove from the heat. Sprinkle the sifted flour over the egg mixture and carefully fold in, using a metal spoon, until the flour is evenly distributed. Pour into the prepared tin and bake just above the centre of the oven at 350F. for 25-30 minutes. Turn out and cool on a wire rack and use as required. Submitted By JAMES LEAR On 10-08-95
