Whole wheat banana nut bread

Ingredients

Quantity Ingredient
Cup whole wheat flour (I use white ok)
1 teaspoon Baking soda
½ teaspoon Salt
cup Oil
½ cup Honey (I use sugar with good results - brown most times)
2 Eggs, beaten
1 cup Mashed bananas (3 medium)
¼ cup Hot water
½ cup Chopped pecans or other nuts (I usually leave out)

Directions

(Whole foods for the whole Family) Sift dry ingredients together. Cream oil and honey in large bowl. Add eggs 1 at a time, beating well after each addition. Stir in bananas. Add dry ingredients alternately with hot water, mixing well after each addition. Fold in pecans. Pour into a greased 5x9-inch loaf pan. Bake at 325F for 55 to 60 minutes. Invert onto wire rack to cool completely before slicing. Freezes well. Yield: 12 servings.
