Wild mushroom chowder

Ingredients

1 pounds Wild mushrooms; washed and diced
2 mediums Onions; diced
½ Stick butter; (2 ounces)
¼ cup All purpose flour
8 Potatoes; peeled and diced
2 tablespoons Dried thyme
Freshly ground black pepper to taste
4 cups Half and half
¼ cup Fresh Italian parsley; chopped, for
; garnish

Directions

Saute the mushrooms and onions in the butter until the onions are translucent. Stir in the flour. Put this mixture into a medium saucepan along with the potatoes, thyme, pepper, and half-and-half.

Cover and simmer for about 20 to 30 minutes. Stir frequently, taking care not to let the chowder burn. Serve it topped, with the Italian parsley.
