Yentl lentil salad

Ingredients

2 cups Cooked lentils
cup Peeled, seeded, chopped
Tomatoes
1 cup Chopped parsley
½ cup Diced celery
½ cup Chopped green pepper
½ cup Chopped red onion
¼ cup Chopped mint
¼ cup Lemon juice
1 tablespoon Olive oil
1 teaspoon Salt
¼ teaspoon Pepper
teaspoon Each garlic powder & cumin
Lettuce leaves
Mint leaves (optional)

Directions

1. In large mixing bowl, combine all ingredients, except lettuce and mint leaves, mixing thoroughly. Chill.

2. Serve on a bed of lettuce.

3. Garnish with mint leaves if desired.
