3 | tablespoons | Olive oil |
1 | Onion, chopped | |
2 | Garlic cloves, minced | |
1 | teaspoon | Dried thyme |
1 | teaspoon | Dried oregano |
10 | ounces | Fresh spinach, chopped |
¼ | cup | Stock - Vegetable or Chicken |
1 | teaspoon | Lemon juice |
½ | teaspoon | Salt |
½ | teaspoon | Pepper |
½ | cup | Light cottage cheese |
Directions
In large pot of boiling salted water, cook pasta for 8-10 minutes or until tender but firm. Drain well and return to pot.
Meanwhile, in large skillet, heat 2 tb of the oil over medium heat; cook onion, garlic, thyme and oregano, stirring occasionally, for about 5 minutes or until onions are softened.
Add to pasta along with remaining oil, spinach, stock, lemon juice, salt and pepper; toss to coat well. Cook over low heat for about 4 minutes or until spinach is wilted. Stir in cottage cheese.
Per serving: about 460 calories, 17g protein, 12 g fat, 70 g carbohydrate, high source fibre, excellent source iron.
