Spinach pieta

Ingredients

Quantity Ingredient
6 packs (10 Oz.) chopped spinach; thaw and drain very
3 pounds Cheddar cheese; cut into small cubes
2 tablespoons Salt
18 Eggs; well beaten
6 pounds Sm. curd cottage cheese
1 cup Flour

Directions

Add flour to beaten eggs and beat until smooth. Add spinach, cheese, cottage cheese and salt. Mix well. Pour into two 12 x 20 x 2 greased stainless pans. Bake at 350 degrees for 1 hour, or until set. Let stand 10 minutes before cutting.

Makes 48 to 60 servings.
