Angelini grill bruschetta

2 | Ripe plum tomatoes | |
3 | Leaves fresh basil | |
1 | teaspoon | Chopped fresh parsley |
3 | tablespoons | Extra-virgin olive oil |
Salt and pepper to taste | ||
2 | Crusty italian rolls | |
1 | clove | Garlic, cut in half |
Directions
Finely chop the tomatoes and basil. Mix them in a bowl with parsley and olive oil. Season with salt and pepper, to taste. Cut the rolls in half. Toast them under a hot broiler for a few minutes, until nicely golden. Remove from oven, and rub the toasted side generously with the cut side of the garlic clove.
