Ingredients

¼ | cup | Honey |
¼ | teaspoon | Anise flavoring |
1¼ | cup | Whole-wheat pastry flour |
2 | tablespoons | Soy flour |
¼ | cup | Wheat germ |
Directions
(These cookies are dairy-free.) In a food processor, blender, or mixing bowl, blend together the eggs, honey, and anise until smooth and creamy. Add the combined flours and wheat germ and mix to blend.
Drop the batter by teaspoonfuls on a cookie sheet lined with parchment paper or greased with a mixture of a few drops of liquid lecithin and a few drops of oil.
Set the cookie sheet, uncovered, in a cool place but not in the refrigerator, for about 8 hours or overnight.
Preheat oven to 325F.
Bake for 6 to 7 minutes. Place cookies on a rack to cool.
The cookies will have a crisp crust and a cake-like interior.
