1½ cup Granulated sugar
2 teaspoons Cinnamon
2 teaspoons Baking soda
1 teaspoon Salt
½ cup Oil; salad
2 Eggs; large
¼ cup Coffee
1½ teaspoon Vanilla extract
2½ cup Apples; peeled and sliced (i.e. Granny Smith)
1 cup Nuts; chopped
1 can Non-stick spray (or butter); for cake pan

Mix all ingredients together in a bowl. Grease the cake pan or use non-stick spray. Pour mixture into the pan. Bake at 350'F for 60 minutes.
