Apple compote

2 | pounds | Golden Delicious apples |
4 | cups | Water |
½ | cup | Sugar |
Juice from a half lemon | ||
1 | Vanilla bean split lengthwise |
Directions
Peel, core and quarter the apples. Put all the ingredients in a large pan. Bring to boil. Reduce heat to low, cover and cook 15 minutes, until apples are slightly soft. Cool and refrigerate. Serve cold.
