Apricot pork medallions

1 | pounds | Pork tenderloin medallions; cut 1 \" thick |
1 | tablespoon | Butter; plus |
1 | teaspoon | Butter |
½ | cup | Apricot jam |
2 | Green onions; sliced | |
¼ | teaspoon | Dried mustard |
1 | tablespoon | Cider vinegar |
Buttered noodles |
Directions
Flatten medallions slightly. Heat 1 Tablespoon of butter over Medium-High heat in a skillet. Saute pork about 2 minutes on each side. Remove from pan. To juice, add 1 tsp. buitter, apricot jam, green onions, mustard and cider vinegar. Cover and simmer for 3-4 minutes. Add prok to heat through.
Serve with buttered noodles. and green salad.
