Baked eggs in rice

Ingredients

3 cups Cooked rice
2 cups Milk
4 tablespoons Butter
4 tablespoons Flour
2 teaspoons Salt
8 eaches Eggs
1 cup Grated cheese
Paprika and pepper

Directions

Make a sauce of the milk, butter, flour, salt, and cheese. Cook in double boiler until smooth and thick. Add ½ cheese sauce to rice.

Mix lightly, using fork. Line well-oiled individual baking dishes with rice mixture. Break 1 egg into each. Season with salt, pepper, and paprika. Place in pan of warm water. Bake in moderate oven (375 F) until white of egg is firm. Serve with cheese sauce. 8 servings.
