Barley-orzo pilaf

Ingredients

1 | teaspoon | Canola or vegetable oil |
1 | Onion(s), finely chopped | |
1 | Garlic clove(s), minced | |
½ | cup | Orzo |
3 | cups | Chicken stock |
1 | cup | Quick-cooking barley |
1 | tablespoon | Thyme, chopped or |
1 | teaspoon | Dried thyme |
2 | tablespoons | Scallion greens, chopped |
Salt and pepper to taste |
Directions
In a medium saucepan, heat oil over medium heat. Add onions and saute until softened, about 5 min. Add garlic and orzo and saute until orzo is golden, 3-5 min. Add chicken stock and bring to a boil. Add barley and thyme. Stir once, reduce heat to low, cover, and simmer for 10 min. Turn off heat and let stand for 5 min to absorb any remaining liquid. Stir in scallions. Season with salt and pepper and serve.
