Directions
Place 2 cups plain nonfat yogurt in a yogurt strainer over a bowl.
(Or, use a small sieve lined with a piece of 100-percent-cotton cheesecloth.) Cover and let drain in the refrigerator for 5 hours or overnight. Makes about 1 cup. Eating Right, Living Well 1993 This can be used in place of cream cheese for many recipes with the result being much less fat and cholesterol.
