Spicy thickened yogurt

1 | cup | Yogurt |
½ | teaspoon | Pure chile powder |
½ | teaspoon | Ground coriander seeds |
1 | teaspoon | Pure maple syrup |
¼ | teaspoon | Salt |
Directions
1. Put the yogurt in a stainless steel strainer set over a bowl and let drain for 3-4 hours at room temperature.
2. In a small skillet, toast the chile powder and coriander over moderately high heat, stirring until slightly darkened and fragrant, about 40 seconds. Scrape toasted spices into a small bowl to cool.
Stir in the drained yogurt, maple syrup and salt. Can be kept in the refrigerator for up to 1 week. Stir well and bring to room temperature before serving.
