Big game marinade

Ingredients

3 | stalks celery, chopped, tops | |

¾ | cup | tarragon wine vinegar |
1 | tablespoon | salt |
2 | cloves | garlic, minced |
12 | crushed peppercorns | |
2 | larges | bay leaves, crumbled |
1 | bottle dry white wine |
Directions
Put all ingredients in a large saucepan and bring to a boil. Lower heat and simmer for 5 minutes. Cool and pour over game pieces. Makes about 5 cups.
