Black bean sauce

2 | teaspoons | Minced fresh ginger |
2 | eaches | Cloves garlic |
½ | cup | Chicken stock |
1 | tablespoon | Soy sauce |
2 | tablespoons | Dry sherry |
½ | teaspoon | Sugar |
½ | teaspoon | Hot chile paste |
2 | teaspoons | Cornstarch |
3 | tablespoons | Fermented black beans |
2 | teaspoons | Sesame oil |
Directions
In a small sauce pan heat oil and fry ginger and garlic. Add stock, soya, sherry, sugar and chile paste. Stir and bring to a boil. Make a slurry of the starch and a little water and stir in. As the sauce thickens add the black beans. Take off the heat and just before serving stir in the sesame oil. Submitted By JIM WELLER On 03-26-95
