Boiled raisin muffins

Ingredients

1 | cup | Seeded raisins; |
1 | cup | Brown sugar;or 1/2 c splenda |
⅔ | cup | Shortening;+ butter mixture |
1 | Egg; | |
1 | teaspoon | Soda; |
1 | teaspoon | Cinnamon; |
½ | teaspoon | Nutmeg; |
2 | cups | Flour; |
Directions
Directions Simmer raisins with just enough water to cover them for 20 minutes.Cool. Cream butter and shortening mixture. Add egg and sugar and beat well. Add raisins and the water they simmered in to creamed mixture and stir. Add the dry ingredients and stir. Put in muffin tins about ⅔ full and bake in oven at 350 degrees until done about 20 minutes.
Note For unsweetened I use ½ cup of splenda sweetener as my husband is diabetic. These are great with your coffee in the morning.
