5 | larges | Sweet Potato; abt. 4 1/4 lbs. |
¼ | cup | Sugar |
¼ | cup | Brandy; or more to taste |
3 | tablespoons | Butter Or Margarine; melted |
1 | teaspoon | Salt |
½ | teaspoon | Nutmeg |
½ | teaspoon | Ginger |
⅛ | teaspoon | Pepper |
1 | tablespoon | Butter Or Margarine; melted |
1 | tablespoon | Orange Rind; grated |

Directions
GARNISH
Oven 350ø
Cook sweet potatoes in boiling water to cover 45 minutes or until tender; cool to touch. Peel and mash. Stir in sugar and next 6 ingredients; spoon mixture into a lightly greased 11 x 7 x 1½-inch baking dish. Brush top with 1 tbs. melted butter; sprinkle with orange rind. Bake at 350ø for 25 to 30 minutes.
Garnish if desired.
Yield: 8 servings.
