Ingredients

3 | ounces | Cauliflower flowerets; cut in bite size pieces |
2 | tablespoons | Fresh parsley; chopped |
2 | tablespoons | Sunflower oil |
½ | teaspoon | Soy sauce |
½ | teaspoon | Salt |
3 | ounces | Black beans; cooked |
3 | ounces | Brown rice; cooked |
3 | ounces | Avocado; sliced |
Directions
Preheat the oven to 375 degrees. Lightly grease a 4 x 8 baking pan with sunflower oil. Steam the cauliflower for about 5 minutes.
Combine all the ingredients except for the avocado. Mix well.
Transfer to baking pan and bake for 15 minutes. After 15 minutes, garnish with avocado slices. Serve.
