6 tablespoons Lime juice
2 eaches Green onions -- thinly
Sliced
1 Serrano
Stemmed, seeded and minced,

2 teaspoons Olive oil
1 teaspoon Garlic -- minced
¼ teaspoon Salt
36 eaches Shrimp
Extra-large uncooked, peeled
And deveined
Shredded lettuce or sliced
Cucumbers, optional
2 tablespoons Sweet red pepper -- minced
Optional
Chili

Directions

MARINADE

Combine all marinade ingredients. Thread shrimp on metal or wooden skewers that have been soaked in water. Place in a large glass baking dish and pour marinade over shrimp. Cover and refrigerate several hours. Preheat broiler or grill. Cook shrimp, turning once, until pink, about 2-3 minutes per side. Brush frequently with the marinade.

Do not overcook. Serve shrimp hot or at room temperature over a bed of shredded lettuce or sliced cucumbers. Sprinkle with red pepper, if desired. Yield: 6 servings
