Directions
MARINADE
Combine all marinade ingredients. Thread shrimp on metal or wooden skewers that have been soaked in water. Place in a large glass baking dish and pour marinade over shrimp. Cover and refrigerate several hours. Preheat broiler or grill. Cook shrimp, turning once, until pink, about 2-3 minutes per side. Brush frequently with the marinade.
Do not overcook. Serve shrimp hot or at room temperature over a bed of shredded lettuce or sliced cucumbers. Sprinkle with red pepper, if desired. Yield: 6 servings
