Bruschetta with a twist

Ingredients

Quantity Ingredient
1 19 oz.can white kidney beans drained and rinsed
1 clove Garlic, chopped
3 tablespoons Olive oil
½ teaspoon Paprika
Salt and freshly ground pepper
1 Italian baguette sliced
1 bunch Arugula leaves, shredded
1 cup Roasted red pepper strips

Directions

Puree beans, garlic, oil and paprika in a food processor or blender.

Season with salt and pepper. Grill baquette slices until golden.
