½ | cup | Butter |
½ | teaspoon | Salt |
1 | cup | Sifted flour |
4 | eaches | Eggs |
Cooking oil for frying | ||
3 | cups | Sugar |
Peel of 1 lime | ||

Directions
Place 1 cup water, the butter and salt in a saucepan. Heat to boiling.
Remove from heat, and add flour all at once stirring vigorously until well mixed. Add eggs, one at a time, mixing until well blended after each addition. In a deep kettle, heat oil to 370` on a frying thermometer. Drop mixture into oil by tablespoonfuls, frying 5 at a time in the following way: Fry for 2 minutes uncovered, 2 minutes covered, 2 minutes uncovered. Drain on absorbent paper, and place in a dessert bowl. Mix remaining ingredients with 4 cups water, and cook syrup until candy thermometer registers 222`. Pour syrup over the fried bunuelos and serve warm. Makes 18. BUNUELOS DE VIENTO
