Ingredients

Vegetable oil for deep-fat frying
2 cups Unsifted all-purpose flour
2 tablespoons Sugar
2 teaspoons Baking powder
1 teaspoon Salt
2 Large eggs, lightly beaten
1 cup Milk
cup Shredded Cheddar cheese
Ketchup (opt.)

Directions

1. In large skillet, heat ½ inch oil until deep-fat thermometer registers 325'F.

2. In large bowl, combine flour, sugar, baking powder, and salt. Add eggs and milk; stir until mixture is just combined. Fold in cheese.

3. Drop heaping tablespoonfuls of cheese batter into hot oil and fry 6 to 8 minutes or until buns are browned and cooked through, turning buns over halfway through cooking time. Drain buns on paper towels and serve warm on serving platter with ketchup, if desired.
