Butter-nut drops

Ingredients

Quantity Ingredient
½ cup Butter
¼ cup Sugar
1 each Egg, separated
½ teaspoon Vanilla
¼ teaspoon Salt
1 cup Cake flour
1 tablespoon Lemon juice
2 tablespoons Grated orange rind
1 tablespoon Grated lemon rind
½ cup Brazil Nuts, ground fine
can Cherries

Directions

Cream butter and sugar well. Add egg yolk and flavoring. Beat well.

Sift dry ingredients together and add with lemon juice and rinds. Mix thoroughly and place in a covered bowl. Chill. Roll into tiny balls (½ tsp. of dough per ball). Dip balls into slightly beaten egg white. Roll in ground nuts. Place on greased cookie sheet 1 inch apart. Press ½ candied cherry on top of each and bake at 350 F. 25 minutes. Makes 40.
