Cajun pan fried bay scallops

Ingredients

pounds Bay scallops
cup Seasoned breadcrumbs
2 tablespoons Plus 2 tsp. oil
Green bell peppers; seeded and chopped
Scallions; chopped
11 ounces Mushrooms; sliced
¼ teaspoon Garlic powder
¾ teaspoon Cajun seasoning
¾ Lime; cut in wedges

Directions

Prep: 10 min, Cook: 5 min.

Combine scallops and breadcrumbs in a sealable plastic bag. Shake to coat scallops. Heat oil in a heavy nonstick skillet over medium heat. Add scallops and remaining ingredients, except lime, and cook 5-7 minutes, gently stirring occasionally, until scallops are opaque. Serve with lime wedges.
