Caramelized onions

Ingredients

Quantity Ingredient
10 ounces Pearl onions -- trimmed and
Peeled
2 tablespoons Olive oil
Salt and pepper
½ teaspoon Dried thyme
1 cup Water

Directions

Cook the onions in the oil in a large skillet over medium high heat until browned, about 3 minutes, stirring constantly. Season with salt, peppre and thyme and add the water. Reduce heat to medium, cover and simmer until the onions are tender and all the water has evaporated, about 12 minutes. Add more water as necessary. Adjust seasoning with salt and pepper. Serve 1⅓ cups. Reserve ⅓ cup for Cheddar Potato Pancakes Jardiniere. Reserve ⅓ cup for Spiced Scallop Stew.
