Caramelized sweet onion slices

3 eaches Large Spanish Sweet Onions (about 3 lbs)
¼ cup Butter
¾ cup Granulated sugar
3 tablespoons Packed brown sugar
2 tablespoons Dried thyme, crushed
½ teaspoon Salt
teaspoon Pepper

Directions

Peel and cut onions into ¾ to 1" slices. Microwave slices at high (100%) 5 minutes. Heat butter in large skillet; add onion slices.

Combine sugars, thyme, salt and pepper. Sprinkle 1 tablespoon sugar mixture over each slice; cook over medium-low heat about 10 minutes on first side. Turn slices, sprinkle each slice with 1 tablespoon sugar mixture and cook 10 more minutes. Turn slices and cook 1 minute to caramelize sugar topping.
