Carrot, sweet potato and apple kugel

Ingredients

Quantity Ingredient
½ cup Margarine; Melted
1 cup Sweet Potato; Peeled And Grated
1 cup Carrot; Peeled And Grated
1 cup Apple (Tart); Peeled And Grated
½ cup Matzo Meal
2 tablespoons Sweet Wine
½ teaspoon Cinnamon
½ cup White Sugar; Can Be Cut A Little
½ cup Brown Sugar; Can be cut a little

Directions

Source: The Complete Passover Cookbook by Frances R. Av Rutick Use some of the melted margarine to lightly grease a 7 X 11 inch baking pan. Combine the remainder of the margarine with the other ingredients. Mix well. Pour into pan. Bake at 375 degree F. for 45 minutes or until brown.

Variation: Add ½ cup chopped pitted prunes and ½ cup raisins.

Can be used as a dessert or side dish.
