Carrot, sweet potato and apple kugel

½ | cup | Margarine; Melted |
1 | cup | Sweet Potato; Peeled And Grated |
1 | cup | Carrot; Peeled And Grated |
1 | cup | Apple (Tart); Peeled And Grated |
½ | cup | Matzo Meal |
2 | tablespoons | Sweet Wine |
½ | teaspoon | Cinnamon |
½ | cup | White Sugar; Can Be Cut A Little |
½ | cup | Brown Sugar; Can be cut a little |
Directions
Source: The Complete Passover Cookbook by Frances R. Av Rutick Use some of the melted margarine to lightly grease a 7 X 11 inch baking pan. Combine the remainder of the margarine with the other ingredients. Mix well. Pour into pan. Bake at 375 degree F. for 45 minutes or until brown.
Variation: Add ½ cup chopped pitted prunes and ½ cup raisins.
Can be used as a dessert or side dish.
