Carrots vichy with thyme

Ingredients

500 grams Small carrots cleaned and left whole
1 tablespoon Sugar
1 tablespoon Butter
Sprigs of thyme
1 Bay leaf
1 bunch Fresh thyme
Salt and freshly ground pepper

Directions

GARNISH

Place the carrots in a saucepan with enough cold water to cover. Add the sugar, butter, bay leaf, half the thyme, salt and pepper to taste and cook over medium heat for about 20 mins or until the carrots are tender. Halfway through the cooking time, increase the heat and reduce the liquid until it is golden brown and caramelised.

Serve the carrots garnished with the remaining sprigs of thyme.
