Cherry macadamia nut pancakes

½ | teaspoon | Salt; |
6 | tablespoons | Sugar; |
½ | teaspoon | Baking soda; |
1 | tablespoon | Baking powder; |
3 | Eggs; | |
3 | cups | Buttermilk; |
4 | tablespoons | Butter; melted |
1 | cup | Sundried cherries; soaked in |
1 | cup | Water; 10 minutes & drained |
½ | cup | Macadamia nuts; |
1½ | cup | Whipped cream; |
Directions
Sift flour, salt, sugar, baking soda and baking powder into a bowl.
Beat eggs, buttermilk and butter in a second bowl. Mix together wet and dry ingredients and stir until sightly lumpy. Dab ¼ cup on heated, oiled griddle. Sprinkle ½ of cherries and nuts over pancakes before turning on the second on the second side. Serve sprinkled with remaining cherries and nuts, topped with 2 oz whipped cream per serving.
