Chicken and rice salad with cashews

Ingredients

Quantity Ingredient
3 cups Cooked rice
2 cups Coarsely diced cooked chicken
½ cup Diced celery
2 Green onions, chopped
1 tablespoon Fresh lemon juice
½ cup Chopped salted cashew nuts
¾ cup Salad dressing or mayonnaise
Salt and pepper
Salad greens

Directions

Combine rice, chicken, celery, onion, lemon juice and nuts. Add salad dressing and mix lightly. Season to taste with salt and pepper.

Chill, and serve on salad greens.

Makes 4 servings.
